  • MADRE DELL'ACETO - La madre dell'aceto è una sostanza composta da una forma di cellulosa e da batteri acidi dell'aceto che si sviluppa dalla fermentazione dei liquidi alcoolici e che, con l'ossigeno, trasforma l'alcool in acido d'aceto. Dopo la fermentazione acetica i prodotti vengono filtrati o pastorizzati per eliminare ogni residuo. Questi aceti sono grezzi quindi non filtrati e non pastorizzati hanno ancora all’interno la ‘’madre’’ dell’aceto che è ricca di proteine ed enzimi.
